Brunch Pizza

I've just got to say, I have an awesome husband. I have been having problems with my computer recently (as many of you know) ... and Brian had watched me suffer enough. He got me a new computer! :) Yay ... Now I can start stalking visiting y'all more  frequently - through Facebook, Pinterest, Twitter, Google+ and of course, all my lovely bloggy friends - through your blogs and I can finally catch up my Google Reader! I've provided my links in case you want to stalk keep up to date with what's going on in my neck of the web. Now I've got to get used to some new stuff, but it's all good - I'm a happy gal!

Speaking of my husband - The first time I made this for my family, we were getting ready to head down to Wilmingon, North Carolina for the weekend. The breakfast was great, the trip was not. Brian and I got into a huge fight over Facebook in the hotel lobby while we were there .... No lie. (Not my proudest moment either, by the way). He posted something that I didn't feel was everyone's business on his wall. Of course, like moths to the flame, when you post something like that - everyone sees it and comments. You can't make people "unsee" it after they've seen it .... and I was mad (to say the least). We resolved our differences and I think it's fair to say, we both learned a lesson that day. For me, I needed to pick a better time and place to have that confrontation .... and Brian, well, he hasn't posted any Facebook statuses like that since! LOL. 

When Brian sees this Brunch Pizza on the menu now, he always says "uh-oh". For the record, I am no way trying to make him relive that day when I make this - but we remember this breakfast and that fight from our trip. We laugh about it now and consider it a lesson learned! ;)

We like to serve this Brunch Pizza with fresh fruit. I have also made this with a pound of bacon in place of the sausage and I have also mixed half a pound of each, sausage and bacon. You can't go wrong. Use what you know your family will love. You can also add a few veggies if you want!


Brunch Pizza Squares
Yield: 8 servings

1 lb. bulk pork sausage
1 tube (8 oz.) refrigerated crescent rolls
4 eggs
2 tbsp. milk
⅛ tsp. black pepper
¾ cup shredded Cheddar cheese

Preheat oven to 400°F. In a skillet, cook and crumble the sausage over medium-high heat until no longer pink; drain. Spray a 13x9x2-in. baking dish with cooking spray. Unroll the crescent rolls into pan. Press dough evenly on the bottom and slightly up the side of the pan, making sure to seal the seams. Sprinkle the cooked sausage over the crescent rolls. In a medium bowl, whisk the eggs, milk and pepper until combined. pour over the sausage. Sprinkle with cheese. Bake uncovered for 15-17 minutes or until golden brown and the cheese is melted.

The kids really enjoyed playing with the Crayola Digital Light Designer. It could keep them busy for hours - seriously! The baby was fascinated by all the lights - can you tell?! ;)


Gabriel really enjoyed playing with the Crayola Digital Light Designer .... He has asked me every single day if he can play with "the light thing"! It's a really cool toy and as you can read in the description, has many features to stimulate young minds! It seems to be a very durable toy that the kids can enjoy for some time to come!


We had a blast (no pun intended) playing with the Crayola Marker Airbrush! I can already see my refrigerator being covered in all my kiddos latest art work! The possibilities are endless with this toy .... you can let your imagination run wild! The best thing about it? No electricity wasted or batteries to buy! It's kid-powered and easy to use! My only complaint is that some of the stencil pieces are hard to get out .... but once they are out, you never have to mess with taking them out again - so that's a plus! This would be a great gift for any budding artist on your holiday list! Even our 3 yr. old was able to use this with some assistance. Our 10 and 11 yr. old's thought this toy rocked and have all kinds of ideas of things to make with it!


The boys are enjoying the new toys! I think we will try our hand at making some new ornaments this week for our Christmas tree with the Crayola Marker Airbrush! I can already see all the fun that will be had!

Chicken Biscuit

Once in awhile, it's nice to have something different for breakfast. Few things are more Southern than fried chicken and biscuits - they go hand-in-hand. Check out any chicken joint and you'll see, chicken and biscuits were made for each other. 

These Chicken Biscuits make a nice breakfast or dinner! They are fairly simple to make and oh, so tasty! If you have a favorite biscuit recipe, feel free to use it instead. Personally, I love Bisquick biscuits! 


Chicken Biscuits
Yield: 8 servings

For the chicken:
4 large boneless, skinless chicken breast halves
1 tbsp. Hot Sauce (or to taste)
1 cup Buttermilk
1½ cups Flour
1 tsp. Salt
½ tsp. Pepper
¼ tsp. cayenne pepper (optional)
Oil for frying

For the biscuits:
2¼ cups Bisquick
⅔ cup milk
Extra Bisquick for rolling dough out

Preheat oven to 450°F. In a medium bowl, combine the Bisquick and milk. Mix until a dough forms. Sprinkle work surface with extra Bisquick. Turn dough out onto work surface. Roll out to about ½-in. thickness. Cut biscuits out with a 2½-in. cutter. Place on an ungreased baking sheet. Bake 8-10 minutes or until golden brown.

Meanwhile, heat oil to 375°F. Flatten the chicken breasts until uniform in thickness. Cut each breast in half so there are 8 chicken pieces total. In a pie plate, combine the hot sauce and buttermilk. In a separate pie plate, combine the flour, salt, pepper and cayenne. Dip each chicken piece in the buttermilk mixture then dip into the flour mixture - coating each side well. Place the chicken pieces in the fryer and fry until golden brown on each side, flipping once if necessary. Do not overcrowd. Drain on paper towels. Repeat with remaining chicken pieces.

Split the biscuit in half and top with one piece of fried chicken. Serve immediately. 


I like my chicken biscuit with an extra few shakes of hot sauce on top. Feel free to add your favorite condiment! We served it up with baked tater tots and fresh fruit.

Christmas printables (8x10)

I hate to admit that I'm a tad bit addicted to PicMonkey. I love playing around and creating stuff. Again, I needed some new printables for the season (I still have my Fall Subway Art up) and decided to make some fun printables using the names of Christmas carols. I also created one for those of you who like snow (I am not in this group of people - Snow is a bad four-letter word and I absolutely try to stay away from that stuff!). 

I'm uploading these to Staples and will be picking mine up this weekend. In my opinion, if you have a place that can copy printables for you, that is definitely the route to go! They are around 50 cents to a dollar a page ... it saves your ink .... and the pictures are very good quality! If you are looking for an economical gift, put a printable in a frame and ta-da! - You have a gift :) You can check out all of my printables, HERE.

Taco Soup

So apparently, I have been living under a rock. Although I have heard of Taco Soup, I had not had it until recently. I knew it was some kind of ground meat, beans, corn, a packet of Ranch dressing and taco seasoning mixture - all made into a soup. 

Since I am forever looking to try new recipes, I decided to give it a go. I had the basic idea and this is what I came up with. My family enjoyed it with a side of cornbread!


Taco Soup
Yield: 6-8 servings

2 lbs. ground beef
1 large onion, chopped
2 cloves, garlic, minced
1 can (15 oz.) pinto beans, rinsed and drained
1 can (15 oz.) red kidney beans, rinsed and drained
1 can (16 oz.) whole kernel corn, drained
1 can (14.5 oz.) Mexican-style diced tomatoes, undrained
1 can (10 oz.) Ro-Tel tomatoes, undrained
1 envelope (1 oz.) Taco seasoning mix
1 envelope (1 oz.) dry Ranch dressing mix
3 cups beef broth or water
Shredded Cheddar cheese, optional
Fritos or Tortilla Chips, optional

In a soup pot, combine the ground beef, onion and garlic. Cook and crumble the beef until it is no longer pink.  Drain. Combine the remaining ingredients except for the Cheddar and chips. Simmer for about 45 minutes to an hour. Serve with Cheddar cheese and chips.

Weekend Round-Up {11-24-12}


Welcome to the Weekend Round-Up, y'all! Thanksgiving is over and it's officially the Christmas season. I hope everyone had a great turkey day. If you dared to venture out for Black Friday, I hope the crowds were well-behaved where you live. 


Sunday, I shared these Pumpkin Pancakes. They make a great breakfast or dinner. They're super easy to make and taste great with maple syrup and toasted nuts! Serve it with bacon or sausage and a side of fruit and you have a meal the whole family will enjoy!


Menu Plan Monday this week included a few new recipes to try. Tuscan Bean Soup and Chicken Hand Pies will probably be making a blog appearance in the future.

I received free samples of Dimples BBQ Sauce and made this BBQ Chicken Bacon Pasta Bake. It was a nice change from regular casseroles .... and if you still have leftover turkey from Thanksgiving, it would be a great way to use it up!


This Pesto Chicken and Gnocchi Soup combines some of my family's favorite ingredients - pesto sauce, chicken and gnocchi! I have tried a few different versions of this soup, but this one remains my favorite. It's easy, delicious and full of flavor! 


Yesterday, I shared an easy homemade Sloppy Joe recipe and I talked about Lunch Ladies. This is one of my husband's favorite meals.  The Bible says man cannot live on bread alone, but I bet if you threw some Sloppy Joe meat on it, Brian would sure try (and live with the Word of God too, of course!)
