Homemade Pizza Rolls

I've had the idea to make these for awhile. I made these for one of our Friday night pizza night's and they were requested to make a repeat appearance. You know that's a win! They were super easy to make. I decided to bake them versus fry them ... partly because of the oil ... and partly because I'm lazy. ;) I made a double batch and just could not see standing there frying all these things ... there were a lot of them! Baking them on a baking sheet was so much faster and less messy!! I knew I wanted the texture of the mixture inside to be pretty small so I ran it through my food processor - but you don't have to! I decided to forego the pizza sauce inside and used it for a dipping sauce instead.

If you're looking for a break from your traditional pizza routine, give these a try! Modify the "toppings" to fit your family's tastes. 

Just a note, egg roll wrappers are usually found in either the fresh produce section or the freezer section of your local grocery store.


Homemade Pizza Rolls
Yields approximately 6-8 servings

1 pkg. (1 lb.) egg roll wrappers
1/2 lb. Italian sausage, cooked and drained
3 oz. sliced pepperoni, cut into quarters
4 baby bella mushrooms, chopped
1 jalapeno, seeded and chopped
1 small onion, chopped
8 oz. Mozzarella, shredded
2 tbsp. water, in a small bowl
Pizza sauce

***If you prefer a smaller texture for your pizza rolls, place the cooked sausage, pepperoni, mushrooms, jalapeno, onion and mozzarella in the bowl of a food processor. Pulse a few times until the pieces are uniformly in minced-sized pieces.***

Preheat oven to 400 degrees F and spray a large baking sheet with non-stick cooking spray or heat oil in a large skillet to 350 degrees F. 

In a medium bowl, combine the cooked sausage, pepperoni, mushrooms, jalapeno, onion and mozzarella. Mix until well combined. You can use the food processor in place of the medium bowl if you prefer your filling in smaller pieces.

Lay out the egg roll wrappers on countertop and place 1/4 cup of the topping mixture in the center going diagonally across the wrap. Fold the bottom corner over the filling; roll snugly to cover the filling. Fold in both sides snugly against the filling. Moisten the top flap with the water. Roll up and seal the top corner. Lay flap-side down until ready to cook.

To bake: Place rolls on prepared baking sheet. Lightly brush the tops with olive oil. Bake for 8 minutes. Carefully turn the pizza rolls over and continue to bake until golden brown, about 5 minutes more.

To fry: Place rolls flap-side down, a few at a time, turning occasionally, until golden brown, 2-3 minutes. Drain on paper towels.

Serve warm with pizza sauce for dipping.

Old-Fashioned Potato Salad
Printable recipe
Yield: 8 Servings

6 medium (2 pounds) potatoes, cut into bite-size chunks
1-1/2 cups mayo
1 tbsp. white vinegar
1 tbsp. yellow mustard
1 tsp. salt
1/4 tsp. pepper
2 medium (1 cup) stalks celery, chopped
1 medium (1/2 cup) onion, chopped
4 hard-cooked eggs, chopped

Place potatoes in a large pan and cover with water. Bring water to a boil and cook about 10 minutes or until tender. Drain.

Meanwhile, mix mayo, vinegar, mustard, salt and pepper in a large plastic bowl. Add potatoes, celery and onion; toss gently. Stir in eggs. Cover and refrigerate at least 4 hours.

Patriotic Poke Cake

Patriotic Poke Cake
Yields: 16 servings

For the cake:
1 box (18 oz.) white cake mix (also eggs, oil and water 
     called for on the box)
2 cups boiling water
2 pkg. (3 oz. each) red jello (any flavor)

For the frosting:
1/2 cup butter, softened
2 tsp. vanilla extract
3-3/4 cup powdered sugar
3-4 tbsp. milk
blue food coloring, (I prefer the 1 oz. bottle made by Wilton)
Patriotic colored sprinkles

Prepare and bake cake according to package directions, using a 13x9-in. cake pan. Let cool. Using a meat fork or the handle of a wooden spoon, pokes holes in the cake every 1/2-in to 1-in. 

Empty the jello packages into a medium-sized bowl and add the boiling water. Stir briskly for 2 minutes or until the jello is dissolved. Evenly pour over the poked cake. Place in the refrigerator for 2-4 hours or until jello is set.

Meanwhile, make the frosting. Cream butter and the vanilla with an electric mixer. Add the powdered sugar and 3 tbsp. milk. Beat with an electric mixer until well combined and fluffy. Add a small amount of blue food coloring, beat well. Add more food coloring if more color is desired. If necessary, add 1 tbsp. milk to the frosting if it needs thinned out.

After jello is set, top cake with frosting. Top with sprinkles.

Store in refrigerator.

When I saw these Creamed Corn Popsicles by Family Fresh Cooking, I wasn't really sure what to think. Creamed corn seemed like one of the oddest things to put in a popsicle. However, corn is summer food ... the thought intrigued me enough to pin it. I think I'll make my kids try them first. ;)


This Upside Down Pizza by Fashioned 4 You looked oh, so yummy! It's kind of like a personal pan pizza bowl. Since we have pizza night every Friday night, I pinned this to give us another way of enjoying our pizza. 



How adorable is this Stars and Stripes Washi Tape Star by Create. Craft. Love? With Memorial Day, the 4th of July and Labor Day coming up, this would be the perfect accessory for your wall. I think I'm the only person who has never used washi tape .... This is the project that will change that. :)



Who doesn't love a good biscuit? (I have a confession ... I love Bisquick. I love the convenience of Bisquick. I have never made from-scratch biscuits. Sad, I know.) These Perfect Biscuits every time by Mom on Timeout look, well,  perfect! I'll be trying them next week and they just may convert me from my out-of-the-box biscuit habit.



Isn't this Patriotic Rose Cake {Video Tutorial} by I Am Baker so festive looking? The cake inside is red, white and blue, too! Amanda (a.k.a. I Am Baker) says it's "quick and easy" ... and you can do it in 10 minutes or less! I'm thinking, if you show up to a summer outing with this thing in tow, people will think you are a baking goddess. Seriously, wouldn't you be impressed? No one has to know how easy it is!

Hamburger Stroganoff

Hamburger Stroganoff is one of those quick weeknight meals. It's economical, too! It tastes much better than those boxes of Hamburger Helper!  If you're so inclined, you can skip the cream of mushroom soup and make your own substitute!


Hamburger Stroganoff
Printable recipe
Yields: 4 servings


1 lb. lean ground beef
1 medium onion
1 clove garlic, finely chopped
1 can (10-3/4 oz.) condensed cream of mushroom soup,
     undiluted ***
4 oz. mushrooms
1 cup (8 oz.) sour cream
Hot cooked noodles


Cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in soup. Simmer uncovered for about 10 minutes. Stir in sour cream and cook until mixture is hot. DO NOT BOIL! Serve over cooked noodles.


*** To make condensed soup substitute: Melt 2 tbsp. butter in a saucepan. Stir in 3 tbsp. flour and stir until smooth and bubbly. While continuously stirring, add 1/2 cup chicken broth and 1/2 cup milk. Bring to a low boil, continuing to stir until it thickens. Salt and pepper to taste. Use in place of canned cream of "whatever kind" of soup. You can also add herbs, celery or mushrooms.

Chicken Cordon Bleu Stromboli

This Chicken Cordon Bleu Stromboli was one of those ideas born out of an "I wonder how this would taste" moment. It was well received by the family and I added it to our file to make again. It's a great way to use leftover chicken and ham.   

Chicken Cordon Bleu Stromboli
Yield: 4-6 servings

1 loaf (1 lb.) frozen bread dough, thawed
2 to 3 cups cooked, chopped chicken
1 to 1-1/2 cups chopped ham
1 cup shredded Swiss cheese
1/4 cup Dijon mustard


Preheat oven to 375 degrees F. Grease a large baking sheet and set aside.


On a lightly floured surface, roll out bread dough into a 14x10 rectangle. Top with chicken, ham, cheese and mustard. Roll up jelly-roll style from the long side and pinch seams to seal. Carefully transfer to the greased baking sheet, seam-side down and tuck ends under. Cover and let rise about 15-20 minutes.


Bake in preheated oven for 25-30 minutes or until golden brown.


Remove from oven and slice. Serve!

"I saw it on Pinterest" Friday

 These Chocolate Raspberry Cheesecake Scones from Rock Recipes look good enough for breakfast or dessert! I've only made scones once, but they were so easy and yummy. I think I've saved every scone recipe I've seen on Pinterest ... and my breakfast board can vouch for it. ;) These scones from Rock Recipes, well, they look like they rock! If you've never checked out Barry's site, do yourself a favor and check it out! 



How genius is this?!?!? How to make the perfect bottomed cake pops from Pint Sized Baker ... When I saw this, I had one of those "duh, why didn't I think of that" moments. Totally **LOVE** this idea! 



These Bucket List Buns by Oh, Bite It! leave me speechless ... I think I would have called hem "The Devil Is Alive Buns" .... These things have the most sinful combo of ingredients of anything I've ever seen on Pinterest! Yummmm!



One of these days I'll get around to doing this Custom Landing Page for Facebook posted by Living Laughing and Loving. I love when fellow bloggers take the time to explain to us newbies all their cool tricks ... and spare us the   hours of agonizing headaches. 



Who doesn't love chicken wings and Sriracha (aka Rooster Sauce, because I can't say the "s" word!!)! Ok, besides the Mister?! How about these Sweet and Spicy Chicken Wings from She Wears Many Hats? Oh yeah, Mmmm, is right! I cannot wait to fire up the grill and try these!

Breakfast Tostada

They say breakfast is the most important meal of the day. I have to admit, I have a hard time eating breakfast .... mine usually consists of toast and coffee. I'm pretty sure that's not what all the "scientific diet doctor people" would tell you is the best way to start your day. The other morning, I was actually wanting breakfast, but I wanted something different ..... I came up with these Breakfast Tostadas with stuff I already had on hand ... and I have to admit, they were pretty good! 

Breakfast Tostada

For each serving you need:
   1/4-1/3 cup  refried beans
   Salsa, if desired
   1-2 scrambled eggs
   shredded Cheddar cheese

Heat beans in a microwave safe container, covered but with space for steam to escape, on full power for about 1 minute or until hot. Spread beans on tostada shell. Top with desired amount of salsa and put scrambled eggs on salsa. Top with shredded Cheddar cheese. Serve!

You could easily add chopped green bell peppers, onions, cooked chorizo, chopped ham, sliced avocados or anything your family enjoys!

Runzas

I remember my mother making Runzas (a.k.a. Bierocks) when I was growing up. To me, these were the original "Hot Pockets". I love the idea of everything being stuffed in to a handy little bun. I'm guessing these originated in Germany ... but I'm so glad they made their way to the Midwest where my Mom grew up - otherwise I may have missed out on these tasty little treats!

Don't let the idea of making the dough intimidate you! I pinky promise it's not hard! You can mix it all by hand with a large bowl and a wooden spoon. However, if you have a mixer with a dough hook, this will make quick work of the dough!




Runzas
Serves 12

For the Dough:
   1/2 cup plus 1 tbsp. warm water (110-115 degrees F)
   1-1/2 tsp. active dry yeast
   3 tbsp. sugar
   1 egg
   1/2 tsp. salt
   2 to 2-1/4 cups bread flour

For the Filling:
   1 lb. ground beef
   2 cups chopped cabbage
   1/2 cup chopped onion
   salt and pepper to taste
   1/2 cup shredded Cheddar cheese
   2 tbsp. butter, melted


In a large bowl, dissolve yeast in water. Add sugar, egg, salt and 1 cup of flour; beat on low speed for about 3 minutes. Add enough remaining flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl and turn once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour. 

Meanwhile in a large skillet, cook ground beef over medium heat until no longer pink; drain. Add cabbage, onion, salt and pepper. Cook over medium heat for about 15 minutes, or until vegetables are tender. Stir in cheese. Remove from heat and set aside to cool.

Punch down dough and divide into 12 pieces. Roll each piece into a 5-6 in. circle. Top each circle with about 1/4 cup of the filling. Fold dough over to meet in the center and pinch edges to seal.

Place seam-side down on a greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. Brush with butter. Bake at 350 degrees F for 20 minutes or until golden brown. Serve warm.
