Today is the first day of school for us. It feels like the summer has flown by. It's time to get back into a routine and into the swing of things. I'm guessing most people have already been back to school for a week or more. Our local public school starts today also - I keep a close schedule to public school to account for the number of mandatory "school days" ... and the high schooler does go to public school. Four of our five kiddos are in school this year .... we have a Junior in high school, a middle schooler, a fifth grader, all the way down to the 3 yr. old starting preschool. If they all went to public school, that would be four different schools! I admit, I'm glad most of them stay home with me. :)
Here's what we're having at our house this week:
Breakfast Monday - Friday: Cereal, Grits, Oatmeal or Smoothies with Fruit of Choice
Lunch All Week: Leftovers, Soup, Sandwiches, Boxed Mac and Cheese, Personal-sized Tortilla Pizzas or Baked Potatoes
Monday - Gnocchi w/Zucchini and Tomatoes, Salad, Rolls
Tuesday - Meatball Subs, Pasta Salad, Fruit
Wednesday - Loaded Baked Potato Soup, Rolls
Thursday - Bubble Biscuit Bake, Salad, Fruit
Friday - Make Your Own Pizza Bowls
Saturday - (B) Breakfast Out
(D) Roasted Italian Sausage w/Veggies, Salad, Rolls
Sunday - (B) Cornbread Pancakes, Lil Smokies, Fruit
(D) Ham and Beans with Cornbread, Trifle

I just posted my menu and I wrote about back to school as well:) I'm trying to use my slow cooker a bunch this week in the hopes it'll make it easier to get back to a more regular schedule--we've had quite the lazy summer when it comes to schedules. Your menu looks great! Meatballs subs: do you make the meatballs in the oven, slow cooker, stove top? I love a good meatball sub, but so rarely make them & think if I did them in the slow cooker I'd be more likely to make them:). Thanks for the inspiration!
