Herbed Dinner Rolls

Bread, in one form or another, is an accompaniment to most of our meals. I originally found this recipe in a 2004 Taste of Home cookbook and have made it numerous times. It's light, airy and seasoned just right. Using a bread machine to mix the dough, makes this an extremely easy recipe! These rolls would also be perfect for the upcoming holidays.

Hot Roast Beef Sandwiches with Gravy

This is one of those recipes that reminds me of my Grandma. It is total comfort food. There aren't a lot of ingredients and not much work - but it is quite tasty and filling! We have also made this recipe with turkey and chicken, substituting chicken broth for the beef broth. It's a great way to use leftover turkey after the holidays, too! We always enjoy this with mashed potatoes and some sort of veggie ... and gravy - homemade gravy ... lots of it! Homemade gravy really is the best ... don't be intimidated by making your own! It's really pretty easy. I hope your family enjoys this as much as mine!

I really am a blessed gal

I really am a blessed gal.  I have some really awesome bloggy friends. To be honest, when I started blogging, I never expected it be what it is. I'm not even sure what I did expect. Seriously, food bloggers ARE. THE. BEST! The community is definitely my favorite thing about blogging. Peanut Butter Banana Breakfast Muffin

I know I've said this before, but I am not a breakfast person. When I do eat breakfast, I want something small and quick - healthy is good, too! :) These muffins are great! My favorite part is the oozy peanut butter! I have to restrain myself from adding some sort of chocolate ... because chocolate just seems to make sense on this little muffin. Sometimes I add a dab of strawberry jelly ... or a slice of bacon! A sprinkle of cinnamon is good option, too! My kiddos love these muffins for breakfast or for a quick snack.

Very Berry Cherry Vanilla Smoothie

It seems summer is winding down for many folks. In most places, the kids are back in school already. (We are starting school on Monday - we seem to be the last of the bunch!) Some of us are trying to hold onto every little bit of summer we can ... others are flooding Pinterest with Fall recipes and decorating ideas fully embracing it. ;) I'm somewhere in the middle. Although I almost look forward to Fall, I'm not quite ready to let go of Summer. This recipe has all the flavor of summer's best and ripest berries packed into a pretty smoothie. It would be a great breakfast on the go ... or a quick snack. It would be a welcome reminder of summer sunshine and warmer days ... even in the middle of winter.

Fish Nuggets

I am a big believer in using leftovers. I also believe in making a new meal out of an old meal if I can. It makes it feel like it's not just "eating leftovers" ... Again. I saw this recipe in a Quick Cooking cookbook by Taste of Home years ago. After the first time I made this, it immediately went into my "Keeper" binder. You can vary the kinds of fish and seasonings to suit your family's tastes. Use salmon or tuna with Asian inspired seasonings and Asian-flavored dipping sauce .... Tilapia with Mediterranean seasonings and a Mediterranean-flavored dipping sauce .... Catfish with Creole seasoning and a spicy Cajun-flavored dipping sauce .... LOTS of possibilities with this one! This recipe is a great way to extend that little bit of leftover fish into enough to feed a family!

Southern Fried Chicken

I love fried chicken ... probably too much. I don't eat it often because it's not really the healthiest choice out there. Sometimes though, a girl's gotta do what a girl's gotta do - and that's eat some fried chicken! 

I know a lot of people are intimidated by the thought of frying chicken. It doesn't have to be scary. My family prefers boneless, skinless chicken breasts - but use whatever your family prefers. It took my chicken about 11-12 minutes per side to be golden brown and cooked through. Don't try to cook your chicken too fast ... You'll burn the outside and the inside will still be raw. It will take a good 10-20 minutes per side depending the kind of chicken pieces you're using and how big they are. If in doubt, check the temperature of the chicken - it should be at least 165° F before eating.

Beefy Jalapeno Corn Bake

Casseroles ..... the very word makes some people cringe, while others smile in delight. What side of the great casserole debate are you on? Personally, I love them. I think they're comforting and they're usually fairly economical. That's a pretty good start to a wonderful recipe in my book!

This Beefy Jalapeno Corn Bake has been in our family's handy dandy "Keeper" binder forever. It's easy to make and there is plenty to feed our family of 7! I have to admit, I have even enjoyed the leftovers for breakfast! (shhhh!) 

Despite having jalapenos, this recipe doesn't have a lot of "heat" to it as long as you remove the seeds and membranes from the jalapenos. Even the kiddos like it. We usually serve this with a side salad and some sort of fruit.

Deli-Style Chicken Salad

This is one of those recipes you truly can customize to make your own. If you want more veggies and less fruit (or vice-versa) ~ you can add and subtract ingredients to get the flavor and texture you want! Use what you have on hand. Want a tropical flavor? Add drained pineapple, chopped mango, shredded coconut and Macadamia nuts in place of the other ingredients! Use your imagination for endless possibilities!

Cuban Black Beans and Rice

In the Cuban culture, this is often called Moros y Cristianos or "Moors and Christians". The black beans represent the darker-skinned Moors, while the rice represents the lighter-skinned Christians. This dish alludes to the wars between the two cultures. I found this recipe years ago on the back of a Bush's Black Beans can. I love that it uses pantry ingredients with a few items from fresh produce. It's a quick, tasty, economical meal.

Debra's Greek Baked Beans

Dear butter beans, lima beans and your kin -

I take back every mean thing I ever said about you. I called you vulgar, disgusting, vile, repugnant, an abomination to beans .... I said you tasted like grass. I have hated you my whole life. I have sat in protest at your appearance on my dinner plate as a child ... I have been threatened with "having you for breakfast" if I didn't eat those said beans on my dinner plate. I have literally gagged myself trying to swallow you without chewing, so I wouldn't have to taste you. I just hadn't used you in the right way. I didn't know any better ... I didn't know I needed to let you mingle with garlic, carrots, onion and tomatoes. You went from being the worst thing imaginable to a sweet, sweet delight .... I now understand why Debra said she loves you! I thought she was crazy! Seriously, I had to try you for myself and the rest is now history. I will never call you names again .... I will not scoff at you in the grocery store .... I will not pick you out of my mixed vegetables. I might even tell people I "like" you. Please forgive my lack of a good recipe and everything I've ever held against you. Debra has changed my mind!

It looks like the farthest thing from being vile and disgusting, doesn't it?! The smell ... oh, my! .... The smell while this was baking - amazing! I could not wait to try them! It's hard to imagine something so simple, smelling so wonderful. I got this recipe from a loyal Love Bakes Good Cake's reader named Debra. I wasn't really sure what to expect ... I didn't know what it would look like, what it would taste like ... I followed Debra's notes - it is her idea and her recipe! I hope this is close and does her bean recipe justice! :)

Summer Breeze Pizza

Spinach ... Strawberries ... Bacon ... Feta ... Balsamic Vinegar and honey. Did you catch that - strawberries on a pizza - and it's not a dessert pizza?! I will admit, I was a little skeptical at first ..... but it was so good! I mean - so good! My kiddos *loved* it! Oh, and the bacon .... you know bacon or chocolate makes everything better .... chocolate would have been weird on this pizza - but the bacon made it divine! ;) I saw this over at Bakeaholic Mama - I changed the name - 1. to make it shorter and 2. this pizza just tastes like summertime! Call it what you want - Summer Breeze Pizza ... Spinach Strawberry Bacon Feta Balsamic Honey Pizza .... or just plain good!

Roast Beef Quiche

I'm a big believer in using leftovers. Sunday has come and gone and you don't know what to do with your leftover roast beef ... You need a fresh idea. This quiche will solve your problem! You could even add some of the leftover carrots and potatoes, if you wanted to! I don't know about you, but I love meals that disguise themselves as "new" meals. My kiddos think they're eating "pie" for supper - so it just makes it that much better! ;)

Chocolate Bliss Cheesecake - Crazy Cooking Challenge

I thought it would be easier for me to find a recipe for this month's Crazy Cooking Challenge. I was so wrong. I'm a little disappointed. I wanted something different, but couldn't find the right "one". I even asked for input from my Facebook readers and got a few good ideas - but not what I was looking for. I ended up settling for a tried and true recipe from the box of Baker's chocolate. This is a very decadent and rich cheesecake - it's so good and practically fail-proof. I've made it so many times, I'd call it my "fall-back" cheesecake. 

Kit-Kat Cake and All my Bloggy Friends #7

I saw variations of this cake on Pinterest and suggested it to my son, Elijah, for his birthday cake. He decided we should make a Peanut Butter Cake with Chocolate-Peanut Butter Frosting, Peanut Butter Frosting Filling, surrounded by Kit-Kat's, topped with Reese's Pieces and tie it with a pretty (pretty was my word, not his) orange ribbon! Yes, it is sugar overload! And ... My 16 year old son decided HE wanted to make this cake by himself for his birthday. As in - he made the cake - almost all by himself! I told him what to do, but he pretty much did all the work. I'm very proud of him and think he did such a great job!

We did have one little incident ..... that required vacuuming out the oven. Not pretty. Not pretty at all. Why would anyone vacuum their oven you ask?! Well, when the cakes were finished baking, Elijah took the first one out just fine .... the second one had a much worse fate. Like, all over the oven and between the door. Apparently, it jumped slipped out of his hand. *Ugh* I scooped as much of it up as I could with a spatula ... but those silly little crumbs can throw a party in your oven get in every nook and cranny! I figured it would just be easier to vacuum them out. We got it all taken care of ... And had to remake the cakes. My husband was even nice enough to go to the store and get us another box of cake mix! (I ♥ him! He's such a keeper!) Since this cake uses two layers ... and we had an extra layer - we froze the third layer for another day when we want a quick dessert, so all was not lost. ;)

I have to apologize for the not so great picture ... the weather was uncooperative and I couldn't find a "good" place to take a picture. Don't let that stop you from trying this tasty pizza! It has a palatable combo of pesto, ham, artichoke hearts, tomatoes and Feta cheese. You can add black olives too, if you desire!

I don't know about you, but when the weather gets warm, we like cooler foods - and stuff that doesn't make the house hot! Tuesday's are "sandwich" days at our house - and some sort of salad is usually an accompaniment to the meal. This takes very little time to prepare and you can use whatever vegetables you have on hand or adjust this to your family's tastes.

This is a quick and easy meal for weeknights. The sauce can be made ahead and stored in the refrigerator for up to a week. I like to use my George Foreman grill for this - but feel free to bake, grill or even stir-fry your chicken!
