Cheesy Tuna Melts

I have to admit something to you ... Growing up, the thought of eating tuna literally made me gag. I can't tell you how many times my parents made me sit at the table (for what seemed like hours), trying to get me to eat tuna sandwiches or tuna noodle casserole. I would always be threatened with "it would be my breakfast" ..... yikes! I'm not sure when or how, but I have since overcome my tuna aversion. 

Thankfully, I have no problem getting my family to eat these sandwiches! They're nice to make when you need something quick and easy ... and they're easy on the budget!

Crispy Pesto Gnocchi with Tomatoes, Black Olives and Feta Cheese

Oh.My.WOW!! This stuff is *so* good! It tastes fancy ... but is so simple! I found the recipe at 1 Cup Awesome (adapted from Rachel Ray Magazine) and adjusted it to my family's tastes and preferences. It was a fantastic meatless meal - and we're already planning on making it again - soon!!! Seriously, pin this now!

Taco Lasagna

If I had to choose a favorite type of ethnic food, I couldn't do it. My husband would probably tell you his is Italian with Mexican/Latin in second. I personally love it all - as long as it doesn't have lima beans! ;) This Taco Lasagna is easy enough for a weeknight meal and is a nice change from the regular tacos or burritos.

Aloha Pizza

This pizza is a combination of two pizzas we tried. The flavors worked very well together. In hindsight, I think this would be good with a little bit of spice added to it .... maybe a diced jalapeno, crushed red pepper flakes or a chipotle pepper in adobo. If you prefer it without the spice, it's just as good the way it is written! I've included the link to Frugal Upstate's pizza dough .... it's the best!

BBQ Bacon Cheeseburger Meatloaf

Even though we enjoy a traditional meatloaf, sometimes it's nice to have something a little bit different. The Mister and boys inspired this BBQ Bacon Cheeseburger Meatloaf - it combines some of their favorite things - BBQ, Bacon, Cheeseburger and Meatloaf! I hope you enjoy this as much as my family did!

Southern Tea Cakes

Today, I'm sharing a Southern Tea Cake recipe with y'all .... If I had to compare it to something, I'd tell you they are like sugar cookies, but not as sweet and more "cake-like", but not really a cake. (Do I have you confused enough yet?!) They are great with afternoon tea or a cup of coffee. If you prefer them a little sweeter, you can mix up an easy glaze and dip them - but I like 'em just plain ol' regular. ;)

Soft Tropical Mango Peach Coconut Cookies and My 100th Post!

Can you believe this is my 100th post?! It seems like such a milestone to me, but it's probably child's play to some of the more experienced bloggers. ;) I started this blog on February 27th, 2012 without any idea of what would happen, if anyone would read it, not knowing what an HTML code was or what a linky party was ... I knew nothing about blog buttons or rss feeds ... I had no idea how much time went into writing posts, taking pictures, editing pictures, editing your post, using social media to get your blog "out there" ... I had no idea how much time goes into making your blog "just right" (does that ever happen by the way?!) ... and I never really knew what a great community there is in blogging. How things have changed! Man, I have learned so much and y'all have been so great to me! :) I am so thankful to everyone who takes the time to read, comment, share, encourage me and just be my Bloggy Friends! 

Today's recipe name is long (sorry - I didn't know what else to call it) - I'm sharing a Soft Tropical Mango Peach Coconut Cookie - The best part?!? It uses frozen yogurt and no eggs! :) Don't fret if you can't find the exact same yogurt - you can use any frozen yogurt or sherbet! (You may have to call it something else, but it's all good!) I love this combination of flavors - if you can find this frozen yogurt, I definitely recommend it!

How to get a custom signature for your blog posts (For Blogger)

I have to admit, I'm still learning about all of this blogging business. Some things have come easy for me ... other things not so much! I figured out how to add a signature pretty easily, I thought. When I didn't know any better, I painstakingly added the HTML for my signature on every. single. post. every. single. time. **Insert me banging my head on the wall repeatedly** I thought there had to be a better, easier way! I'm gonna share that better, easier way! It is so simple ... You can do it, too! (Hopefully, this will spare you from banging your head on the wall!)

It's easy to use a program like My Live Signature to create your own personal signature to sign your blog. Here is a step-by-step tutorial! Click the pictures if you need to "see" an example of what the screen will look like or where to click.

Go to My Live Signature. Choose Proceed, Log-In or Register. (I used proceed for this tutorial. I registered for my actual blog signature - in case I ever need it again, I can retrieve it!) Select "Using the signature creation wizard".

Salmon Patties

This is another one of those meals I have fond memories of from my childhood. I love that these Salmon Patties are made with cornflakes instead of crackers like most recipes. My grandma made them this way ... my mom made them this way ... and now I continue with my own kiddos. Nothing fancy about them ... but they are oh, so good! We always had these salmon patties with fried potatoes and creamed corn - always!

Tomato Spinach Alfredo Pizza

My family looks forward to pizza night on Friday. We've tried all sorts of combinations for toppings. My kiddos keep trying to convince me to make a Mac and Cheese with Hot Dog Pizza ... but thus far, I can't bring myself to do it. It's desecration to me ... They think they're onto something. If When I do decide to make Mac and Cheese with Hot Dog Pizza for them, I think I'm going to make this Tomato Spinach Alfredo Pizza for me! ;) It is my favorite homemade pizza so far! I might try a small sliver piece of theirs to be a good sport .... Because you know I'm gonna make that pizza one of these days ... and any good Mom has to try their kiddos crazy concoctions ... Right?!

I use jarred Alfredo sauce for this because it is fast and easy. I find one jar easily makes 2 large pizzas. Also, feel free to make your own Alfredo sauce if you like. Although I use frozen spinach, this pizza would be just as tasty with fresh spinach, too! I provided a link to my favorite pizza dough from Frugal Upstate ... I truly believe it is "the best" ... and oh, so close to Pizza Hut!

Cookie Dough Truffles

We all have that one thing we just can't resist - for me, it's Peanut Butter Cups - preferably, frozen! I married a chocolate chip cookie junkie. I truly believe the Mister would eat chocolate chip cookie dough in just about every imaginable form! He even eats it with raw eggs (blech - I give him "the speech" every time I see him do it). Luckily, these Cookie Dough Truffles have NO RAW EGGS! He doesn't have to listen to my soapbox raw-egg-eating rant ... and neither do you! These are perfect for the summertime, when you really don't want to turn on the oven - but need a chocolate chip cookie fix ... and if you prefer them uncoated - for the cookie dough without the salmonella eggs, they are great that way, too!

Italian Chicken with Peperonata & Noodles - Crazy Cooking Challenge

I was excited to find out this month's Crazy Cooking Challenge was Fried Chicken! You know being a Southern girl, I love me some fried chicken! Mmmmm hmmmm! I had a few ideas of which recipe to make, but hadn't really settled on any one in particular. Did I want to make a traditional flour breading, a spicy breading ... breadcrumbs, panko ... cornmeal - maybe some kind of wings?! Too many choices! When Tina emailed us to let us know we pretty much had free reign with this challenge - I was even more excited! I scrapped all the other recipe ideas and decided to make my Italian Chicken with Peperonata & Noodles! You can thank me later! Seriously - this stuff is impressive, but easy! Don't be intimidated with the idea of making your own sauce ... time is the key ingredient - but it is so simple to make (and even better to eat)! ;)

Today I wanted to share an easy cheesecake recipe with you. No, this isn't my birthday cake! :) I'm making a Devil's Food Cake with Peanut Butter Frosting and PB Cups for that! Gotta feed my addiction, ya know?! ;) I've had this recipe so long, I can't even remember where it came from. This cheesecake recipe has a fruity flavor, similar to Sweet Tarts candy. It is easy to throw together because it uses drink mixes and a prepared crust. If you're looking for an easy dessert that impresses, this couldn't be any easier!

All my Bloggy Friends #2 and Unstuffed Cabbage Roll Casserole

 Sometimes the best things in life really are simple. This Unstuffed Cabbage Roll Casserole is a little bit different and a nice play on traditional Cabbage Rolls. It is easy to prepare and very economical. Plus, there is no need to precook the cabbage! If your would like, you may also top the cabbage with another can of tomato sauce, to make it more like the traditional dish. We like to have this with a veggie, cottage cheese and some kind of bread on the side.
