Buttery Rolls

Is it just me, or does time seem to be flying by?! I cannot believe it's almost July already ... Before we know it, it'll be Christmas! (So not ready to even think about that yet!) 

Today I wanted to share yet another, easy bread recipe with you. These rolls make a regular appearance at our house. They are so easy to make and taste wonderful! They make a nice accompaniment to any meal ... and are also great for holiday dinners, BBQ's and potlucks!

Mexican Pinto Bean Casserole

Sometimes, we need meals that really stretch our dollar. This Mexican Pinto Bean Casserole is one of those kinds of dishes. Not only is it very economical, but it tastes great too! Add the fact that it's super simple to prepare - and you've got yourself a great meal idea!

This is one of our family's favorite Meatless Monday meals. Since it's very economical, we enjoy it on occasion. I have been known to hide partially cooked zucchini, onions, jalapenos or carrots in this, too! Of course, if you would like to add ground beef, it would be fantastic with that also!

Cornbread Pancakes

Are you looking for something different for breakfast? These Cornbread Pancakes are calling your name! They have a slight crunch from the cornmeal and they are "oh, so good" with butter and maple syrup. They would make a nice addition to a Sunday Brunch. Serve them with a side of fruit and your favorite sausage, bacon or ham for an easy meal anytime. 

These are not overly sweet, in my opinion, but if you prefer your cornbread not-so-sweet, use a little less sugar ... and on the other side, if like your cornbread on the sweeter side ... use the full amount! Being from the South, I like the full amount. ;)

One time while eating it, I envisioned all the possibilities in that dessert ... I've made a chocolate mint version and now, this banana split version. I have a few more ideas pondered as well. ;)

I paired the Pumpkin Seed Rye biscuits with cream cheese and a smear of pumpkin butter for a simple afternoon snack. We all enjoyed the biscuits and thought they made a perfect snack!

Chocolate Covered Strawberry Shake - Crazy Cooking Challenge

This is my first time participating in the Crazy Cooking Challenge at Mom's Crazy Cooking. I was a little hesitant, being so new to blogging and not really knowing what to do. Truth be told, I've learned a lot ... and I am continuing to learn a whole lot more! I am excited to see how my first link-up goes and may participate in more Cooking Challenge's in the future! 

This month's theme is fruit smoothies/shakes. It seemed like a pretty easy challenge to get in on ... and then I realized ... there are like a bazillion fruit smoothie and shake recipes online! How in the world am I going to narrow this down?!? After days (literally) of searching high and low, I found the perfect recipe to try - Chocolate Covered Strawberry Shake by Budget Gourmet Mom! When I saw Krista's shake, I knew that was the one I was going to use. I like her recipe for a couple of reasons ... One, it has chocolate! Winning! Two, it seemed like I could easily adapt other fruits and yogurt flavors in the future. I can't even remember the last time I had a shake or smoothie before this. Years, probably! I don't even know why I don't make them ... I like them, I just "forget" about them! I think after this Cooking Challenge experience, I will have fruit smoothies and shakes a little more often than every two or three years! ;) I found a ton of recipes I want to try! When looking over Krista's recipe, I did have to Google "Nature's Sunshine Smartmeal Chocolate", because I had no idea what that was. When I saw what it was, I had no intention of spending $20-35 for a bag of this stuff. I didn't have any other protein powder on hand and really didn't want to buy something I may never use again .... I had some Nestle Nesquik Chocolate Powder Flavored Milk Additive (you can pick this up at most regular grocery stores near the hot chocolate) so I decided to use that. I used chocolate milk instead of regular milk (I never drink milk - ever ... chocolate-flavored was the only way it was going in my shake). Everything else, I kept the same.

Double Chocolate Whopper Bars

These Double Chocolate Whoppers Bars are super yummy and easy! They are nice and chewy. After my family devoured the whole pan, I thought how nice it would have been to have a Chocolate Malted Buttercream Frosting on them, to accent and bring out the Whoppers candy in the bar. Note to self for the next time, because there definitely will be a next time! :)

This recipe could just as easily be made into cookies if you prefer. I've also given a note at the bottom ... just in case you want to make cookies instead!

Butter Bean Burgers

I'm going to be honest with you. I do not like lima beans ... or anything that resembles a lima bean. There, I've said it. In all fairness, I know they're good for you. (Notice, I said you ... not me! Haha!) I just have a hard time eating them ... and the only time I sort of willingly eat them, is if they're in mixed veggies ... even then, I try my hardest to put them on my kid's plates that way I don't have to eat them. When I saw this recipe, I wasn't really sure what to think, and when I read the reviews, people seemed to like it. We needed some new stuff for our Meatless Monday and I decided to put on my big girl panties and be a good sport. I modified a few things from the original just because of personal preference. I tried frying two of the patties, and just like the reviews said of the original recipe, they fell apart. I baked the other six ... and I have to say, that's the way to go in my opinion. Plus baking is healthier anyways! I told my 3 yr. old it was a "Krabby Patty" and he ate the whole thing! I couldn't believe it. My whole family actually liked them ..... including me! Granted, it was butter beans, but they're just huge lima beans in my opinion! If you're looking for a meatless alternative, try making your own Butter Bean Burger. If you're like me, just put on your big girl panties, be a good sport, and you might surprise yourself. ;) 

You can also try substituting your favorite beans or lentils for a different kind of bean burger. I think next time, I may add some different veggies, too!
