Menu Plan Printables - 4 color choices

I wanted an easy way to plan my menu and grocery list, so I decided to make a printable. I left the days blank in case anyone ran their weekly menu on different days than me. I also left the grocery section open - I like to sort my shopping list based on how I shop in the store, but figured someone else may not shop "my" way. I hope this will be useful to you!

Lemon Sauce

Use this sauce with your favorite desserts!

Caramel Sauce

Homemade caramel sauce is heaven on earth! Whenever I make this, I swear I hear angels singing. This makes quite a bit, but it keeps well in the refrigerator. Use it to top ice cream, cake, gingerbread or in all your recipes that use caramel. You could also just grab a spoon .... no one will judge. ;)


There is something so Christmas-y about gingerbread. The smell of it baking says the holiday's are near. I really don't have too many memories of eating it while growing up. I'm not sure if my family didn't like it or if they just chose other desserts? Either way, as an adult, I love it and enjoy sharing this with my family and friends. This recipe pairs well with Caramel Sauce or Lemon Sauce. It's also fantastic by itself! Enjoy!

Cranberry Orange Christmas Sandies

I recently shared this over at Mandatory Mooch. I'm re-sharing it here in case you missed it over at Nichi's place. 

I'm not much of a cookie baker - except at Christmas time! I don't know what it is about the season that motivates me to actually want to bake cookies?! I am an equal opportunity cookie eater .... I don't discriminate and I don't have deep seeded trust issues from thinking raisins were chocolate chips .... Soft, chewy, crispy, fluffy, frosted, unfrosted, sprinkled or not - I love 'em all. However, I hate standing over them, waiting and watching .... switching out the batches every so many minutes. I hate to admit, but I don't have the patience. Patience is not one of my virtues. This time of year, it's easier to throw all of that impatience out the window and actually enjoy baking cookies.

When you have cookies as awesome as these Cranberry Orange Christmas Sandies, it's worth waiting and watching. Kids love them ... adults love them. They are very similar to Pecan Sandies - but get kicked up with some fruit and nonpareils. Wouldn't these look great on a Christmas cookie tray?! They are light and buttery, like a sandy should be - with a hint of fruitiness. They make great gifts for neighbors, teachers, co-workers ..... or just keep them all for yourself. No one will judge! ;)

Red Velvet Pancakes with Cream Cheese Frosting

I shared this a few weeks ago over at Nap-Time Creations and I wanted to share it here in case anyone missed it or didn't have a chance to go visit Emily. 

I don't know about you, but I enjoy making breakfast for my family on the weekends and holidays. I knew right away I wanted to share these Red Velvet Pancakes with y'all. They are perfect for a Christmas breakfast ... or anytime for that matter! Since it starts with a cake mix, they're super easy to whip up! Of course, with the frosting and sprinkles, you know it has to be good! ;) These pancakes are sure to make your holiday breakfast a little more special.

Who remembers watching "A Charlie Brown Christmas" growing up?! I think I have watched it every single Christmas. It's almost not Christmas without it. I thought it would be fun to make a printable out of the part when Linus explains to Charlie Brown, the true meaning of Christmas. 

Triple Chocolate Donuts

Have I told y'all how much I love chocolate? I mean, who doesn't - right?! My family also loves donuts - chocolate ones especially! I don't make these too often, but they are a nice treat every now and then. If you want an absolutely carefree breakfast for Christmas morning (or any morning, for that matter) - make some of these the night before. They're simple, quick and delish! I do serve them with fresh fruit salad - ya know, to balance it out. ;)

Weekend Round-Up {12-15-12}

**I want to just take a moment to say, my thoughts and prayers are with the people affected by the Newtown, CT school shooting yesterday. I cannot fathom what what would have driven someone to those kind of extremes. Even though I do not know anyone directly involved, my heart breaks and I tear up just writing this. It is too easy to take life for granted .... truthfully, our precious loved ones can be taken away from us at any moment. It pains my heart to know there are parents who bought and wrapped Christmas gifts for those children ..... only to be reminded in a little over a week, those children will never receive those gifts. They will never get the chance to see them grow up, get married or do anything else. Ever. Life is too short. I know it is easy to focus on the negative and debate gun rights vs. a stronger gun policy at a time like this. I only pray that God comforts those who need comfort - and I pray for our country. Peanut Butter Fudge

I should have titled this post "Lead me not into temptation" .... because apparently, I can find it on my own! I have a weakness, a vice almost, when it comes to peanut butter or chocolate - and {in my best Southern drawl} "Lawd, have mercy" if the two are combined. It is too hard for me to resist. I thought about drizzling melted chocolate over the top - but I refrained (barely). 

What I love about this fudge: 1. It's easy 2. It's quick 3. It's peanut butter (duh) and 4. It's soft and 5. oh, so creamy ..... 

If it tickles your fancy to drizzle melted chocolate over it, don't forget to mail some to me, then by all means, drizzle away.

Meaty Pasta Bake

When time is short, the last thing you want to do is spend hours in the kitchen cooking dinner. Am I right?! When life gets super busy, I like to have meals that I can prepare in advance and pop it in the oven right before dinner. As tempting as hitting the drive-thru is, it gets expensive and home-cooked meals just taste better in my opinion (and are better for you!) Plus, with the holiday's approaching - quick meals are almost a necessity. This is also great for company because it's easy to double (and will feed a bunch of people) - I just use my roasting pan when I double this. If you want an easy, no-fuss clean-up, use aluminum pans that can be thrown away!

If you want to cook this ahead, do all the steps up to putting it in the pan. Cover and refrigerate (or freeze). Allow the frozen casserole to thaw in the refrigerator before cooking. Remove from the refrigerator 30 minutes prior to baking. When you're ready to eat, just bake according to recipe directions! Easy peasy! 

Sometimes, I also like to add saute'd mushrooms, onions and green pepper - just for the extra nutrition of the veggies and the color. If you prefer a more saucy pasta, feel free to add more sauce. I used half regular rigatoni noodles and half mezzi rigatoni noodles (shorter rigatoni noodles) - but use whatever you have on hand or whatever your family prefers.

We enjoyed this meal with a side salad and crusty French Bread

I had tried moving some pictures to different files on photobucket .... and apparently, you can't do that without screwing up your links. Weekend Round-Up {12-8-12}

I have a confession to make ... I haven't even started our Christmas shopping yet. We did get a tree last weekend - and we even decorated it. I just have not felt in the "Christmas-y" mood and my mind is on a million other things (like getting our house sold). I plan to knock some things off the shopping list today and pray that my procrastination hasn't made the task more difficult. I hate shopping - and the thought of being out in a mad-house, just makes me not even want to go out at all. Please, pray for me and my sanity. ;)

Soft Sugar Cookies

I'm not a cookie baker usually - I really only enjoy it around the holiday's. I don't have the patience to watch and wait and switch pans constantly. In my opinion, Christmas just isn't the same without a few dozen homemade cookies - so this is the one time of the year, that I will suck it up and make the concession. I usually employ my children to help, which they thoroughly enjoy!

I knew I wanted to try this recipe from Annie Eats for this year's sugar cookies - I hate to admit it, but I kind of like those soft, frosted cookies you buy at the store in the clear containers. I don't buy them often because to me, they are so expensive and I'd rather make them myself. This recipe is pretty spot-on ... so save your money and make them yourself! I would not change anything about the recipe - they were perfect! I just made these Wednesday (as in, the day before yesterday) and we are planning on making more over the weekend! Don't worry, we didn't eat them all - the first batch got sent to work with Brian, so we need more - right?!

Panera Bread Review

With the weather turning colder, is there anything more comforting than a bowl of soup? Add in the hustle and bustle of the holiday season - and sometimes you just don't have time to make a from-scratch soup. Panera Bread offers a variety of soups in their bakery-cafes daily! You can enjoy classic flavors like French Onion and Broccoli Cheddar .... or check out a new favorite such as Low-Fat Vegetarian Garden Vegetable with Pesto. With fresh ingredients and the "Goes Good In" philosophy of making soup the right way - there is no doubt you're getting a great, satisfying and delicious bowl of soup every time!

When I was offered to review Panera Bread, I accepted right away. Truth be told, we had never been to Panera Bread before this - and I thought this would be the perfect opportunity to try it! It also gave Brian and I, a little bit of a "date night" - something we don't get to do very often with five kids! We got our food to go - which is great for those times when you want to pick something up on your way home from work or after a long day of holiday shopping!

EASY Mac and Cheese

I know I have told y'all about my love of Bisquick. I'm not ashamed to admit it either. I would almost bet, most American homes have a big yellow box in their pantry or cupboard. I personally love how versatile it is ...... Sure, you can make biscuits and pancakes .... waffles and dumplings - but you can use it in so many more things! Check out the Betty Crocker website sometime if you don't believe me! Seriously, I love the stuff!

I found this recipe a few years ago. If you're familiar with the "Impossibly Easy Pies" that Bisquick is famous for, then you'll understand the greatness of this mac and cheese. Although I don't make it too often, it is nice for lunch occasionally. It's different in that, you don't cook the noodles. You dump everything into a pie plate and let it do it's thing. This is a nice meal for when you've got 500 things going on and can't concentrate on one. It's easy to throw together. Serve it with a green veggie and maybe some fruit, and you've got a simple meatless meal (read budget-friendly)!

Personally, I like the color of the paprika and parsley on top, but feel free to omit them if you like. It doesn't really "do" anything for the dish except make it prettier, in my opinion! :)

Weekend Round-Up {12-1-12}

What a week this has been! God is so good! Just when we were beginning to feel trapped in our current housing situation, we finally got an offer on our house (it's been on the market since April-ish) ... and we hope to close soon! For us, that means some changes are on the horizon and we couldn't be happier or more excited about them! I will just say, it has been an unbelievable week (in so many ways) and we feel extremely blessed! If you believe in prayer, please say a prayer for our family and the family buying our home - that everything works out ... and for God's guidance for our family, as we begin the next phase of our life. We appreciate it so much! :)

Crayola Giveaway

I recently had the opportunity to to review the Crayola Digital Light Designer and the Crayola Marker Airbrush with my kiddos. When you're a kid, is there anything better than getting new toys to play with? I will admit, I "had" to try them out too! Y'all know, when we were kids we didn't have all these cool toys .... it's almost our parental duty to check 'em out, right?! To make sure they work properly, of course! ;)

Chicken Biscuit

Once in awhile, it's nice to have something different for breakfast. Few things are more Southern than fried chicken and biscuits - they go hand-in-hand. Check out any chicken joint and you'll see, chicken and biscuits were made for each other. 

These Chicken Biscuits make a nice breakfast or dinner! They are fairly simple to make and oh, so tasty! If you have a favorite biscuit recipe, feel free to use it instead. Personally, I love Bisquick biscuits!

Christmas printables (8x10)

I hate to admit that I'm a tad bit addicted to PicMonkey. I love playing around and creating stuff. Again, I needed some new printables for the season (I still have my Fall Subway Art up) and decided to make some fun printables using the names of Christmas carols. I also created one for those of you who like snow (I am not in this group of people - Snow is a bad four-letter word and I absolutely try to stay away from that stuff!). 

I'm uploading these to Staples and will be picking mine up this weekend. In my opinion, if you have a place that can copy printables for you, that is definitely the route to go! They are around 50 cents to a dollar a page ... it saves your ink .... and the pictures are very good quality! Taco Soup

So apparently, I have been living under a rock. Although I have heard of Taco Soup, I had not had it until recently. I knew it was some kind of ground meat, beans, corn, a packet of Ranch dressing and taco seasoning mixture - all made into a soup. 

Since I am forever looking to try new recipes, I decided to give it a go. I had the basic idea and this is what I came up with. My family enjoyed it with a side of cornbread!

Sloppy Joe's and Lunch Lady Land

My husband's favorite meal is Sloppy Joe's. It always seems to make him smile when he sees it on my menu for the week! We have them about once a month because I know he loves them! They're really simple to make - even without the canned sauce stuff!

Depending on how "sloppy" you like your Joe's, will determine how long you need to simmer the filling. Personally, I don't like them too sloppy, so I tend to cook it for the longer period of time. 

I don't know why, and maybe it's a generational thing - I'm sure people my age know the song. I cannot say Sloppy Joe's without thinking of Lunch Lady Land .... and singing "Sloppy Joe, sloppy, Sloppy Joe" just like the song .... I am so sorry if you're singing it along with me me now :) If you have never heard it ... I have the video just for ya .....

You will never think of Sloppy Joe's the same way again. You are welcome.

Joking. Totally joking, except really, you will always think of this song when you hear "Sloppy Joe" ... or maybe it's just me?! 

For the record, I think Lunch Ladies get such a bad rap. My lunch ladies never were this bad ... and honestly, my school lunch experience wasn't that awful either. Of course, back when I was a kid, they actually made real food - not just pizza, burgers, hot dogs and chicken nuggets. Truthfully, I even enjoyed some of the school food! 

Anyways, we were talking about making our own Sloppy Joe's ....

Pesto Chicken and Gnocchi Soup

Happy Thanksgiving, y'all :) I hope everyone is getting to spend time with their loved ones today! Be blessed 

Today's recipe combines some of my family's favorite ingredients - pesto sauce, chicken and gnocchi! I have tried a few different versions of this soup, but this one remains my favorite. It's easy, delicious and full of flavor! 

I like to double the recipe so we can have leftovers for lunch during the week. I personally would suggest, if you will have more soup than you will eat at one meal, to add the gnocchi to the bowls individually and ladle the soup over the top. Store the remaining soup and gnocchi separately. I think the gnocchi gets kinda funky if you let it play in the soup for too long. If the texture doesn't bother you, by all means, let 'em mingle together in the fridge! By the way, I'm the same way with pasta in my soup - I usually add it to the bowls individually if I know there will be leftovers. It's just my personal preference, but feel free to do what you like and what is best for your family and their needs.
